Since we're moving out in two days, the food in our fridge either has to be eaten or thrown out. To help along the process, I threw a bunch of random things into a baking dish and made a casserole. I was happy with the result. My dinner (and lunch for tomorrow and possibly even dinner tomorrow) was made up of two chopped eggplants, mushrooms, baby spinach, cubed tofu, chopped garlic, pasta sauce,low fat white cheddar cheese, low fat feta cheese and a little bit of parmesan sprinkled on top.
Much better than wasting all of that food, right?? I'm glad I could share that with you! Bed time! ZZZZZZZZZZZZZZZZZZZZZZZzzzzzzzzzzzzzzzzzzzzzzzzzzzzzz
