A Tribute to Australian Mangoes

Summer is well on its way in Australia, so what does that mean? Summer fruit, of course! Now, for all of your Northern-Hemisphere-ers, I am not looking to rub it in. I also love winter fruit. For now, though, I'm going to focus on the warm-weather goods.

I fell in love with mangoes in college, thanks to my roommate who lived with me for all four years. Her parents would drive down for the day to visit us, and they would literally stock our fridge with all sorts of fruits, grilled veggies, chicken, turkey and veggie burgers...I could go on and on. I wish they could be  here to stock my fridge now. Anyway, they almost always brought us mangoes. When they weren't in season,they brought us frozen mango slices from Trader Joes (OMG I MISS THAT SHOP SO MUCH!!!!). Thanks to them, my fridge in Australia almost always contains a mango in the summer.

I bought at least one mango per week last summer, and then I almost cried when they stopped stocking them for winter. Really, it was a big deal. I'm sure you can imagine my excitement when I found them a few weeks ago!

I've been incorporating them into my lunches. I made a salad today with lettuce, chickpeas and one fresh mango.

If you ever make a salad with mangoes, make sure that you don't cut it up until you want to eat it. They get s-l-i-m-y otherwise. I learned the hard way a few weeks ago when I wanted to save time by making my salad at night. It was as if Jabba the Hut was living and drooling in my tupperware overnight. Not good.

The Brainiac has his first exam tomorrow (he has two this week), so I'm going to be helpful by typing up his index for him. He admires my typing skils that I learned from my touch keyboarding class in sixth grade.

Jen, Jabba the Hut mango mess? Yum!
Your IPhone takes great pix! I love them! It makes me miss the river and, of course, Rundle Street! That was so much fun!

Oh, wish Al lots of luck on the final parts of his CPA exams or whatever they are called there! He is a certified public GENIUS!
